A shopping list for the aspiring fish chef
There are a few key ingredients which you should always have to hand when trying your hand at fish cookery.
Lemons and limes (or bottled lemon / lime juice.)
Lemon is the perfect accompaniment to all fish dishes, and you'll always need some regardless of what you're cooking.
Sea salt and black pepper in a grinder.
Good quality olive oil.
Garlic bulbs... because you always need garlic bulbs
Unsalted butter, for frying.
Plain flour for dredging fillets.
A good selection of herbs, such as parsley, oregano, thyme, dill and mint.
White wine and a bottle or two of good cider.
Wine or cider are excellent ingredients to build simple sauces when cooking fish and shellfish.
Fresh single cream, for sauces.
Soy sauce, fresh chillies, and coriander - if you fancy going Asian with your fish.
Soured cream or creme fraiche is excellent to add tang to sauces.
Fresh samphire (when in season) livens up any fish dish.
